The restaurant takes its name from the Aztec seed "amaranth", rich in protein, calcium and iron, known for its many virtues, including diabetes.
If the name is exotic, the cuisine is traditional with a touch of originality, but especially of the market!
All the menus are renewed regularly according to the season and the creativity of the chef.
All products are prepared on site (even the bread!) and most are from organic agriculture or from the region.
